Ombra Prosecco - Pasanella & Son

The word "ombra" can refer to both a glass of wine and a shade or shadow in the Veneto area. The expression originates from an antiquated practice of gathering to enjoy a glass of wine under the shadow of Venice's renowned Campanile in Saint Mark's Square. Vallis Mareni creates Ombra Prosecco, a sparkling wine with a string-tied cork and using conventional techniques. It is made from carefully chosen grapes from the Treviso hills that are mechanically pressed later under low pressure; the resulting wine is then transformed into sparkling wine by the Charmat technique in very contemporary cellars. This wine brings to mind the locals' unpretentious, jovial attitude.
